Proprietor Nick Pembroke has worked within the catering industry for 11 years. Most of this time has been spent running high-profile bars, clubs and restaurants in London for the Slug and Lettuce Group. He has also spent time in Sydney, Australia expanding his knowledge and experience in the City's premier restaurants and bars.

Nick opened The Gatsby, his first venture, in November 2005. By this point he had been considering the old Rex building as a possible site for some time. Convinced that with its stunning architecture, tasteful décor and unique layout it was an ideal site for The Gatsby.

He has transformed the former cinema entrance and tea room into a wonderfully chic and classy fine dining restaurant and cocktail / piano bar.

Nick has definitely brought a cosmopolitan feel to this area of Hertfordshire.
